Grilled Chicken “Lunchable”

My daughter loves to peel carrots and cucumbers and was quite helpful with this particular lunch. She peeled the cucumbers, washed the grapes and pulled them off the stem.  Here is what we came up with:

Grilled Chicken Lunchable

– Leftover organic grilled chicken from the weekend.

– Grapes. We usually purchase organic grapes (and raisins) because they are part of the dirty dozen, but I always have a hard time finding them this time of year. I am expecting them to be available in the next few weeks. My kids have been bugging me for them, so I broke down and bought non-organic ones and washed them really well. Unfortunately, washing them does not do the complete trick because the pesticides soak through the skin of the grape.

– Organic cucumber. Cucumbers are part of the dirty dozen, thus high in pesticide residue, so we always purchase organic. If you cannot purchase organic, it is a good idea to peel them to remove as much pesticide residue as possible.

– Watermelon. Watermelon is part of the clean 15, thus we do not purchase this organic.

– Cashews, peanuts and raisins.

– Water. She uses a Klean Kanteen water bottle.
