Real Super Bowl Snacks

This post was my husband’s fantastic idea :). So here is a quick round-up of some real food goodies for your Super Bowl Sunday. The recipe names are clickable links to the original recipe (except for the first two — asian meatballs and the nut mix). I hope everyone has a great weekend!

Asian Meatballs

To make the meatballs combine the following in a bowl and form into meatballs: 3 tbsp coconut aminos, 2 drops of fish sauce*, 1/4 cup chopped green onions, 1 tsp minced fresh ginger, 1 tsp minced garlic, 1/2 tsp salt (we use Himalayan pink salt), 1/2 tsp pepper and 1 pound of ground turkey (preferably organic). Bake at 425 °F for 25 minutes on a rimmed baking sheet. *We use Red Boat Fish Sauce, the only ingredients are anchovy and sea salt.

Cinnamon Nut Mix

Preheat oven to 275 degrees. Whisk together 1 egg white, 1 tbsp coconut oil, 1/4 tsp pure vanilla extract, 1 tsp ground cinnamon and 2 pinches of salt (we use Himalayan pink salt). Add 1/4 cup almonds, 1/4 cup macadamia nuts, 1/2 cup walnuts and 2 tbsp almond meal. Spread evenly on a rimmed baking sheet and bake for 25 to 30 minutes until toasted. Sprinkle extra salt if desired.

Pecan/Almond Butter Cups

Melt Enjoy Life Chocolate chunks or chips in a double boiler, coat the bottom of a candy mold with the chocolate, let it set, then added a tiny scoop of pecan butter and poured chocolate over the top.

Trail Mix Cups

1. Line a mini-muffin pan with paper liners (we didn’t have mini muffin cups, so we just used a regular sized muffin tin).
2. Spoon a tablespoon of melted chocolate into each muffin liner (we use Enjoy Life Chocolate Chips).
3. Toss together nuts and fruit. Place mixture into the melted chocolate and use a spoon to make sure all of the goods are glued down into the melted chocolate.
4. Place the muffin pan in the refrigerator until the chocolate is firm.

Here are the combinations we used:

– Dehydrated Bananas (chopped) & Raw Pecans (chopped)
– Dried Cherries (chopped) & Pistachios (chopped)
– Dried Apricots & Almonds (sliced or chopped)

TRAIL MIX CUPS

Wings

  • 20 Chicken wings (organic if possible)
  • 2 tbsp hot sauce (only ingredients should be distilled vinegar, red pepper, salt)
  • 1/4 cup ghee (organic butter works too)
  • 1 tbsp apple cider vinegar
  • 1/2 tsp paprika
  • 1/4-1/2 tsp cayenne pepper (depending on taste)
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp celery seed
  1. Preheat oven to 375°F (190°C) and place wings on greased sheet pan. We use the Misto Gourmet Olive Oil Sprayer to grease the pan. I have Trader Joe’s California Estate Extra Virgin Olive Oil in my sprayer.
  2. Bake in oven for 30 minutes, or until they are cooked through.
  3. Combine hot sauce, ghee or butter, vinegar, paprika, cayenne, black pepper, garlic powder, and celery seed, in a medium saucepan.
  4. Set over low heat, mixing until butter is completely melted and combined; simmer for 5 minutes and remove from heat.
  5. When wings are baked, dip in sauce to coat well, then shake off excess and return coated wings to baking sheet.
  6. Reduce over temperature to 250°F (120°C) and give wings another 15 minutes. Toss wings in remaining sauce after you remove from over and serve.

Corn Dog Mini Muffins

  • 1/4 cup melted butter or ghee
  • 3 eggs
  • 2 tbsp honey (preferably raw)
  • 1/4 cup almond flour, firmly packed
  • 2 tbsp coconut flour, firmly packed
  • 1/4 tsp baking soda
  • 1/4 tsp Himalayan pink salt (any salt will work)
  • 3-4 hot dogs (cut in 1/2 inch slices)
  1. Preheat oven to 325℉.
  2. Whisk together melted butter, eggs and honey.
  3. Stir in dry ingredients.
  4. Scoop into greased mini muffin pans, about 1 tablespoon of batter in each.
  5. Place 1 hot dog slice in each muffin.
  6. Bake for 14-17 minutes, until golden brown.
  7. Enjoy!

Corn Dog Nuggets

Cauliflower Hummus

  • About 1 pound cauliflower florets
  • 2 tbsp tahini
  • 2 tbsp good olive oil (or more to taste/texture preference)
  • 1 clove garlic
  • Zest and juice (about 4 tbsp) of 2 lemons
  • 1/2 teaspoon cumin
  • 1 teaspoon Himalayan pink salt
  • Pepper to taste
  1. Bring about 1/2″ water to boil in a large covered pot with a steamer basket installed.
  2. Once it’s boiling, arrange florets in a single layer, stems pointed down to take the heat more directly. Add garlic. Cover and let steam until a knife can be easily inserted into the thickest stem.
  3. Lift from water and let drain and cool for a minute or two.
  4. In a food processor, collect remaining ingredients.
  5. Add cauliflower and process until smooth. Taste and adjust seasoning as needed.
  6. Chill in the refrigerator for at least one hour to allow flavors to meld.

Garlic Chili Chicken Legs

  • 10 chicken legs (preferably organic)
  • 1 tsp Himalayan pink salt
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp onion powder
  • 2 tsp garlic powder
  • coconut oil
  1. Pre-heat oven to 400 degrees.
  2. Grease a glass baking dish with coconut oil.
  3. Place legs in dish and pat dry with paper towels.
  4. Coat legs with coconut oil.
  5. Season using all of the spice mix.
  6. Bake for 1 hour.

Garlic Chili Chicken Legs

Grain-Free Chocolate Chip Cookies

  • 3 cups almond flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup raw honey
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp Himalayan pink salt
  • 1 tsp vanilla extract
  • 1 1/2 cups Enjoy Life Semi-Sweet Chocolate Chips
  1. Preheat oven to 375℉.
  2. Line a baking sheet with parchment paper.
  3. In a small mixing bowl, combine dry ingredients. Set aside.
  4. In a medium mixing bowl, beat the eggs, honey, and vanilla extract with a hand mixer, or wire whisk.
  5. Pour wet ingredients slowly into dry ingredients and beat with mixer or fork until combined.
  6. Add the melted coconut oil and continue to blend until combined. Stir in chocolate chips.
  7. Drop Tablespoon size balls of cookie dough onto prepared baking sheet.
  8. Bake for approximately 8-10 minutes.

Sloppy Joe Meatballs

FOR THE MEATBALLS

  • 1 large yellow onion, diced
  • 2 pounds ground beef (preferably organic)
  • 3 tbsp Worcestershire sauce
  • 2 tbsp coconut aminos
  • 2 tbsp apple cider vinegar
  • Salt & pepper to taste

FOR THE SAUCE

  • 1 28-ounce can tomato sauce
  • 1/2 cup water
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar
  • 1/2 cup roasted red peppers, diced
  • Salt to taste
  1. Preheat oven to 350 degrees F.
  2. In a medium pot, heat a tablespoon of butter over medium heat. Add the onion and sauté until cooked through.
  3. Meanwhile, in a large bowl, combine the rest of the meatball ingredients. Once the onions are cooked, add half of them to the meatball mixture (keeping the other half in the pot). Use your hands or a scoop to form the meat into balls. Place the balls onto a baking sheet and bake until cooked through — depending on the size of your meatballs, about 15-20 minutes.
  4. Meanwhile, add the sauce ingredients to the onions in the pot. Simmer the sauce while the meatballs bake in the oven.
  5. Place the meatballs int he sauce and let them get cozy and hang out for a few minutes before serving.
  6. Enjoy!

Sloppy Joe Meatballs

Spice Rubbed Brisket

  • 2 tbsp chili powder
  • 1 tbsp Himalayan pink salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground black pepper
  • 1 tablespoon coconut palm sugar
  • 1 tablespoon seasoned salt (see notes below on how to make your own seasoned salt)
  • 1 (4 pound) beef brisket
  • 1 1/2 cups beef broth
  1. Preheat oven to 350 degrees F.
  2. Combine spices in a small bowl and blend.
  3. Apply rub to surface of brisket.
  4. Cook brisket, uncovered, in preheated oven for 1 hour.
  5. Remove from oven and add beef broth to roasting pan. Lower oven temperature to 300 degrees F, cover roasting pan tightly with foil, and cook 3 more hours.
  6. Let brisket rest 30 minutes before slicing.
  7. Slice against the grain, place slices back in broth in a serving dish.
  8. Enjoy!
