Banana Bread

My husband has a friend staying with us tonight and they were talking about a craving for Dunkin Donuts. I obviously did not want this to happen, so I quickly looked for a bread type recipe. I found a simple one for banana bread and modified it a bit. They loved it, ate it all and said it tasted healthy, but was very good. Eight simple ingredients made a wholesome, delicious dessert and I think we will have the leftovers for breakfast tomorrow. Enjoy!

Banana Bread

Ingredients

  • 1 cup almond butter
  • 1 cup almond flour
  • 4 ripe bananas
  • 2 eggs
  • 1/2 tbsp cinnamon
  • 1/2 tsp Himalayan pink salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup Enjoy Life Mini Chocolate Chips (optional)

Instructions

  1. Preheat oven to 350 F.
  2. Mash the bananas in a bowl.
  3. Add almond butter, almond flour and eggs and mix.
  4. Add baking powder and baking soda.
  5. Pour batter in a loaf pan.
  6. Bake for 35-45 minutes, until a toothpick inserted in the middle comes out clean.

Notes:

Purchase all organic ingredients if possible.
